For the target user, a high refresh rate display, a multi-camera setup, or a massive battery doesn’t compensate for losing iOS. The target market for a 'budget' iPhone isn’t looking for the best hardware on paper; they’re looking for a familiar, reliable entry point into the Apple ecosystem. They want simplicity, not a feature-heavy device from a brand they’ve never heard of, regardless of any price difference.
I’m not knocking the alternatives, from a purely spec-based perspective, most at this price point objectively offer more value. However, specs aren't everything to people outside of tech sites like this. Until a Poco or any other Android alternative runs iOS, the hardware will remain secondary to the customer considering this device to begin with.

I don't think many shopping for an iPhone are cross referencing it with a "Poco X8 Pro Max". But even then the 17e has it beaten in most ways:
17e has a fast chipset, the fastest actually below $1100, with only A19 Pro and binned 8 Elite Gen5 being faster. This Poco X8 is much slower and the closest equivalent is the "F8 Ultra" which costs the same as the 17e anyway.
It has a solid main camera which is more important than multiple lenses most users never even touch. It also has most Androids beaten when it comes to video recording.
Wireless charging, which the X8 lacks. For that you have to upgrade to the F8 Ultra, which again costs the same as the 17e.
Reliable software - even if we ignore the iOS vs Android debate, Xiaomi is no Samsung and certainly not Google. Their version of Android is extremely bloated and has had little to do with AOSP since its inception. There's also the question of how trustworthy Xiaomi is with how they handle user data and I don't think I can give an optimistic answer to that question.
Can you decidedly answer the question of whether the F8 Ultra or 17e is better? Not really, it depends on your needs and wants. If you want a big 120Hz display and don't mind Xiaomi's bloated version of Android then you'd be looking at the F8 Ultra, if not you'd be better served with the 17e. I think the smaller 60Hz display will be the Achilles' feet of the e series for a very long time and that is intentional to get you to buy the regular model instead.
Not a bad iphone, if one only desires an iphone.
If screen size doesn't matter, there are much more well rounded phones for the price.

But as for size, I don't know, maybe you're relatively new to phones, but in the 30 years I've been using them, following news and reviews starting with good old paper magazines back in the day, we've seen all sorts of trends. But that choices were this skewed and anyone who has a slightly different idea than the mainstream, even for undeniably useful features like 3,5 mm jack or SD slot, or those that are almost purely a matter of personal preference like size, immediately gets called out and insulted, that's kind of new. Used to expect that only from Apple fanboys and such.
I don't have tiny alien hands and have also used a 77 mm wide BlackBerry Priv for years. That one had something to show for it, however, and was a phone designed with serious use in mind and had a very grippy rubbery plastic battery cover. Unlike current flagships with useless glass or metal covers whose only purpose is to attract you in a store but have to exit it with a 5 € plastic case to regain some usability and add a further couple of mm size all around.
And no, 71 mm width of my Xperia 1 III and equally huge work S23 aren't compact in my book either. Even the wife's 67 mm wide Xperia 5 IV shouldn't be called that. A truly compact phone should IMO be perfectly usable single-handed, and while the 5 IV is that for me, given that I'm average height male (accordingly probably have average hands size too), that means that for a bit under 50 % of males and ~70-80 % of women it wouldn't be.
It's somehow WORSE than Pixel 10a while costing more...

I have one of the biggest Hands and I still dropped me Edge 50U like 8 Times from overstretching and getting it instable to reach something. Sure the notification bar can be pulled down from the Home screen anywhere, not in any app though. I would be fine myself with 6.3 inch screen, but there are People with smaller hands.
My Hand is about 24cm Long if I start measuring from my wrist.
6.67 is just slightly over my Comfort zone.
