Effective immediately, we’ll be: • simplifying our dough process • switching to more “efficient” ingredients • prioritizing speed over quality • and making a few compromises to help us scale No more obsessing over flour.     “Why do you keep growing?” I get that question a lot. Because the truth is — growth doesn’t always mean more income… at least not right away. It usually means: More headaches More compliance More permits More licenses More team members More leases Just… more of everything. So why do it? Because I always come back to the same question: Why did you start in the first place? Wasn’t it to share your version of hospitality? Your take on food? Your spin on something you believed the market needed? If you’re doing it right, people don’t just like it — they crave it. Not just the food, but the experience. The feeling. The brand. And if that’s true… why wouldn’t you bring that to more people? For me, growth is about: • Creating more opportunities for our team • Reaching more communities • Expanding something we genuinely believe in Because the only thing better than doing it once… is doing it 10 times. Then 100 times. And here’s the honest part most people don’t say: If you truly believed in yourself and your concept — and knew you could pull it off — you’d go for it. So when someone says, “I don’t want that”… Sometimes that’s not preference. Sometimes that’s doubt. And to that, I’d say: Get over it — and get over yourself. Take the risk. Go for the ride.     I had the chance to be part of a TV segment recently, and it got me thinking about something bigger happening in our industry… Almost every time I check Google Trends, McDonald's is sitting at or near the top. This week? A K-Pop + Netflix collaboration that analysts say could drive $100M in just a few days. (MarketWatch) That’s not luck. That’s strategy. McDonald’s isn’t just selling food anymore — they’re selling moments, culture, and fandom. When I was a kid, I vividly remember my parents buying vhs tapes of Indiana Jones and other classics, as well as cd’s. My first experience with Elton John was crocodile rock off his hits album sold at McDonald’s! They’re turning: • Movies into meals • Fans into customers • Limited-time offers into global events And they do it over and over again. Meanwhile, most restaurants are still asking: “How do we get more customers?” The better question is: 👉 “How do we become something people care about beyond the food?” Is our 3/30 LTO with Fry the Coop a step in this direction? Maybe Joe Fontana and I should stand outside our restaurants dressed like Jinu? iYKYK Because the real takeaway here isn’t about K-Pop… It’s about relevance. At BILLY BRICKS, we’re thinking the same way: How do we create experiences, collaborations, and moments that people want to be part of — not just places they stop to eat? The brands that win right now aren’t just feeding people. They’re giving people something to talk about. Curious how others are thinking about this — Are you seeing the same trend?

    Didn’t make it out to Pizza Expo this year. Last year was great — a lot of good conversations, ideas, and time with people in the industry. But this year, the priorities looked a little different. We’re laser-focused on operations and growth right now: • dialing in systems • improving execution • preparing for a busy season ahead At the same time: • truck season is about to take off • Moo Joe’s is ramping up in Evanston and beyond • we’re about to break ground in Oswego And on top of all that — it’s my kids’ spring break. Before things get really busy, taking a little time to recharge and be present with family felt like the right move. There’s a season for everything. This year, it’s about building. For those of you at Expo — what’s been the can’t-miss this year?

And when you put the labels side by side — what we were ordering vs. what’s now being made specifically for us — the difference says everything. This isn’t just about packaging.     Saw that MCL Restaurants in Indiana is closing after 70+ years. That’s not just a headline — that’s generations of work, families, memories, and a brand that meant something to a lot of people.     What do you think about the state of 3rd party marketplaces? Bruce Irving made his thoughts clear with this hilarious take, yet subtle, take down 🤣 Something we are seriously considering BILLY BRICKS after seeing our most recent breakdown of fees: we use 3rd party marketplaces to reach “new customers.” How many operators feel if they “could afford” to spend 5-10k a month of per unit on marketing that they could acquire their own 1st party customers, because that’s roughly what those orders are costing us per month per unit and it begs the question…how good can we be at our own marketing to own our own customers rather than paying these fees that would make the Soprano crew blush!
