¿Where did Hippocrates write:

Taking care of one's health is not to eat to satiety.

Ασχεσις υγις, αχοριη τρφης.

This is quoted on p. 441n1 of Dufieux, Nature et virginité. He says it comes from "De Morbis Vulgaribus, lib. VI.", but I cannot find this among Perseus's Greek works for Hippocrates; I only see De morbis popularibus, which doesn't seem to be the same thing, as it only has 3 books.

Where can I find the Greek of De morbis vulgaribus?

The cited work is known in English as Epidemics, after its Greek title Ἐπιδημίαι. The passage you are seeking is found in Book 6, Chapter 4, Section 18. The complete sentence reads

ἄσκησις ὑγιής, ἀκορίη τροφῆς, ἀοκνίη πόνων.

I have quoted this text from page 238 of the Loeb Classical Library edition of Hippocrates' Epidemics Books 2 & 4–7, edited and translated by Wesley D. Smith. (You may be able to access this volume through your library at this link.) Here is the provided translation:

Healthy discipline, not gluttonizing, not avoiding work.
