Might you be interested in a Drupal Learning Project?
I had an amazing trip to Cambodia in January of 2010 working with Teachers Across Borders (http://teachersacrossborders.org.au) and considering solutions for professional development for in-service teachers.
We hope to eventually find a way to build a Drupal installation profile to support blended learning and cataloging of learning materials, particularly focusing on lesson plans and classroom materials across multiple languages.
More recently I have been helping to organize the Drupal Open Learning Imitative (DOLI) (http://drupalopenlearning.org) and am thinking that this would make a great Drupal Learning Project for the DOLI's Drupal Kata / project based learning program--where we could build a team of mentors and apprentices to accomplish the task.
I have spoken with a couple of organizations that may be interested in such an effort--the response has been positive.
This idea is in its infancy, although it could move rapidly with the writing of a preliminary proposal and development of grant requests, especially if we can find other organizations with a similar interest and ability to commit time and/or resources to the project.

I am looking for examples of online curriculum/document libraries that are searchable, and that users can contribute to. Any thoughts?

What defines your curriculum, or document library?
Using CCKs we can organize almost any type of content and bring in a workflow around it. With Apache Solr module you can index these content and make them searchable.
What exactly are you looking for, can help in detailing the implementation.
Is your curriculum a playlist? Do you need to record any activity around them?

Where does the topic fit into the content hierarchy of the site. So is it topics -> lessons -> sessions? What do we want to achieve?
Further, based on how these content need to be utilized there is a lot we can learn from already existing learning Management systems on how to handle such hierarchy and the kind of interface that would add value to build them.
