docs: align public documentation with stable v1.3.0

Summary

• replace the obsolete pre-release architecture narrative with the stable v1.3.0 architecture
• align Product Quick Start with the current optional Sleep Daily and HRV Daily Run-All scope
• present the output contract as the current stable 1.x contract with additive v1.1, v1.2, and v1.3 layers
• align the Dataset Relationship Catalog heading with released v1.3 status
• clarify the Product-contract / ACP-governance authority boundary in AGENTS.md
• add a focused current-state validator and run it in CI
