I’ve been cooking professionally since I was 17. Early on, it was about refinement through technique, precision, discipline. I trained in classical kitchens, worked my way up through some of the best, and learnt how to bring structure and elegance to a plate. But over time, what’s shaped me most is learning when to step back and let the ingredients take the lead.
In my role as Executive Head Chef at Fowlescombe Farm, that feels second nature. This is a working regenerative farm, and what we cook is entirely shaped by the land around us: the heritage breeds we rear, the soil we grow in and the conversations I have every day with our head gardener and farm manger. We don’t write menus weeks in advance. We respond to what’s ready, what’s thriving and what the season’s telling us.
My style is honest and detail-driven. I like depth of flavour, balance, and for everything on the plate to have a reason to be there. Whether it’s a slow-braised neck of our own Manx Loaghtan lamb or celeriac salt-baked straight from the beds, it’s always about creating something with care, and with full respect for how it got to the kitchen in the first place.

My cookbook is a celebration of my time at The Angel, a place I was proud to lead and where I really found my voice in the kitchen. It brings together 60 dishes that featured on the menu over the years, including a few that received incredible support during my time on MasterChef: The Professionals and Great British Menu.
Now at Fowlescombe Farm, I’m cooking in an even closer relationship with the land, but the philosophy that inspired by book remains the same: respect the ingredient, honour the season and cook with care. I hope you enjoy recreating some of my favourite dishes in your own kitchen.

My menus at Fowlescombe Farm are ever-changing, but the one thing they have in common is a respect for seasonality and a focus on what the land offers me to work with at this very moment in time. All are shaped by constant conversation with Head Gardener Shelley and Farm Manager Rosie, who know our regenerative farm like the back of their hand. With their wisdom, we create dishes that truly represent a moment in time here.
The Millbrook Inn
Alongside Fowlescombe, I am also Executive Chef at The Millbrook Inn. Our ethos here is the same, with the land and the seasons leading the way, and much of the produce we serve is sourced from our own farm. Featured in the Michelin Guide, the little pub by the creek has a big reputation for food and I'm proud to be continuing that with dishes that reflect our location and the incredible produce on our doorstep.
