I'm certain you won't go wrong with either of them, heck even the Xiaomi 17 Ultra is a very solid contender.
For me:
- Image quality, color science and resolution are the main factors, all linked also with the image processing, then I'm interested in at least 2 biggest sensors and if possible a long zoom. On the video side, I really enjoy shooting with BMC app, which is miles better compared to anything native, it's free and shines with the biggest and best sensors available.
- A nice flat, bright but color accurate flicker free, native blue light filer, screen, with good anti refection (not interested in privacy mode, I want maximum visibility from all angles),
- A large battery, that lasts over of day of use.
- Decent speakers, but good sound output for external headphones.
- A nice Android experience where I can install whatever I want, low resource consumption for a better battery life.
- As little throttling as possible (important for longer high quality video clip capture whiteout frame rate drop).
- A price I can afford.
But as I was saying, you must make your own list of priorities, wishes, make comparisons and really do chose what's best for you, not somebody else. 😀

object separation is the most natural on Vivo and Xiaomi thanks to these brands spending more on actual big sensors unlike Samsung and Apple.

While it does limit your field-of-view, it also gets rid of the distortion of the camera. Hence it looks a bit natural and is considered a sweet spot for wide-angle photography.
Of course, you can just crop from the ultrawide camera to get to 1x zoom, since the Vivo X300U will have a big 1/1.3" type sensor for its ultrawide. Thanks to the huge sensor, you can get away with decent quality photos at 23mm or even 28mm cropped photos.
TL;DR
While the 35mm lens is a technically correct focal length to shoot wide-angle shots - if you're coming from a normal phone camera, this might be shock for you. So just do your research before buying, 'kay? (Or just get the Oppo FX9U - that's also a decent option)

Never did I say 35mm is inherently bad - it's all down to personal preference BUT one should be aware of the trade-offs made by the 35mm lens.
It's my bad that I didn't talk about why 35mm is a sweet spot, but seeing the knee-jerk reaction from you people is a bit disheartening.

This means you&... moreI actually quite like the fact that vivo uses 35 mm equiv. as the normal lens; it's closer to the 50 mm that's usually considered the normal lens, with also 40-55 or 35-60 being a range one might see as normal. There isn't really a formal definition, but ~24 that's normal in phones is already a very wide and "unnatural" perspective.

You have no clue about photography!
Also Vivo has a huge sensor on the ultra wide lens which means they can cover from 14mm to 35mm with that one, 35 to 70 with the main one, tele with the third one.

This means you&... moreFor me 23-24mm are the most useless focals, too wide for portrait or other subjects, too narrow for landscape, boring focal. I've got 1 inch 23mm in phone, yet 99% are crops at least 1.5x, for my use 35mm will be perfect as a base.

This means you're stuck with 1.5x zoom all the time. Now, you actually can shoot in 1x zoom, but for that you'll have to crop in from the ultrawide camera - which will inevitably result in loss in detail. So if that sounds like a deal-breaker - avoid the X300U, just get the Oppo FX9U or Xiaomi 17U instead (their main cameras are set at 1x zoom, similar to every other phone in the market).
On the other hand, Oppo FX9U is rumored to have a 10x zoom camera. I don't think it'll be any useful for hobbyist photographers, but maybe you'd be interested in it.

been with vivo for last 2 years but I think this year imma give it a try to x9 ultra to see how it compares, x300 ultra will have only 6600 battery while oppo 7000mah
