When 75% of diners won't cross the $16 threshold per glass, but average lists are pushing $18–$21, we aren't just losing a sale, but also losing a generation of drinkers. The most startling data here isn't just the price; it’s the '11-year grudge.' By serving astringent, high-tannin styles to novices, the industry is effectively gatekeeping itself out of existence.
