There are a number of data types that come baked into JIRA that make projects work. This metadata isn't just behind the scenes. It's available to JIRA users to modify and create new flavors of these data types, making JIRA highly customizable. Most JIRA concepts, or data types, are customizable and creatable. What you're tracking the The status of and projects, the types of issues, and the fields describing those issues are customizable. How users interact with JIRA to provide values for those items. What fields they see and can fill in for issues. How fields are organized on a screen, which are required, all of that is customizable. And how issues change status over time, what statuses you have in a project, and what happens when issues change status. It's all also customizable.
