We’re excited to announce that our fermentation process now runs at >100g/liter titer, a milestone that few fermentation platforms have achieved. Such high productivity along with a simple downstream process supports a very low cost of production, which makes our clean-label food emulsifiers highly competitive as replacements for mono- and di-glycerides, DATEM, PGPR, and other legacy synthetics. Our proprietary yeast fermentation platform can convert a wide range of waste feedstocks and sidestreams (crude glycerol, brewers' waste, mother liquors, polyol sidestreams, lignocellulosic, etc.) into high-value products for CPG and food ingredients markets. Ruby Bio is already converting corn sugar into drop-in replacements and higher-performing alternatives for a wide range of food ingredients and specialty chemicals. Now we will be building the same products from up-cycled waste feedstocks and sidestreams, with new funding from USDA and BEAM Circular.
