I doubt that any people need to manage versions for mock APIs but if this is a need, following the same versioning convention as the API that is being mocked makes the most sense.

Versioning software is a solved problem with the advent of semantic versioning. It is hard to imagine another solution. Question is how deep you go with your SemVer. Most people just use Major and Minor. Which is often enough for test APIs. Containerize them, put a version number, and backward compatibility is take care of. Consumers can choose to use a particular version
